Whilst the modern winemaking techniques and rich fruit of Rosemount Estate wines mean they are able to be appreciated immediately, they will also continue to evolve for many years if stored correctly. Use the Wine Cellaring Guide to discover the ideal time to drink your Rosemount Estate wines.

Cellaring Tips

You need not spend a fortune on the latest and greatest temperature-controlled wine cellar to store your Rosemount Estate wines. Follow these basic rules below, and you can usually find an area of your home to properly cellar your wine.

- Lay the wine on its side. This keeps the cork moist and preserves the seal, which will keep oxidation to a minimum.

- Keep it in a cool, dark, dry place. It is important to keep the temperature cool, about 13-15°C (55-59°F) is ideal, and as consistent as possible. Fluctuations in temperature can cause wines to age faster than they should. The kitchen is not a good place to store wine, as it is usually too warm, but a hall closet will work.

- Minimise vibration. Near the washer or dryer is not a good idea.

- Keep light to a minimum in the cellar area.

- A constant relative humidity of between 65% and 70% is recommended by professional storage facilities. Do not be tempted to use a traditional air conditioning unit to lower the temperature of your wine. Air conditioning affects humidity so professional storage facilities use a split-system refrigeration system which will not affect humidity. This is outside most budgets and a cool, dry area will be suitable for most needs.

The Rosemount Estate cellaring guide is meant to give an indication of the ideal time to drink each wine depending on your personal preferences. The cellaring guide for each wine is divided into three areas, reflecting the different stages of a wines cellaring life:

Vintage Release : When newly released a wine exhibits bright, fresh fruit flavours and firm tannins. As the wine ages the fruit flavours will further integrate with the oak component, the tannins will soften and aged characters will evolve.

Peak Maturity : This is the period that represents, in the opinion of our winemakers, the ideal time to appreciate this particular wine. The many and varied aromas and flavours have fully integrated and the primary fruit flavours and aged characters are in perfect balance.

Full Maturity : As wines move past the peak drinking time they continue to gain aged characters and will be enjoyed by those who prefer interest and complexity over primary fruit flavours.
